4 slices Swiss cheese
1 minced clove garlic
8 ounces sliced mushrooms
1 cup beef broth
4 buns
Directions:
1. Combine in a large bowl, the ground beef, Worcestershire sauce, 2 tablespoons shallots, salt, pepper and 2/3 minced rosemary, mixing until incorporated.
2. Form beef mixture into four burger patties, set aside.
3. In an extra-large cast iron skillet, heat the extra-virgin olive oil
4. Place the burger patties in the skillet and cook for 4 to 5 minutes each side for medium doneness.
5. Place on top of each patty the Swiss cheese slices until melty and transfer immediately to a plate. Slightly cover with a nonstick-sprayed foil.
6. Melt one tablespoon butter in the skillet. Add the mushrooms and 1 tablespoon of shallots. Sprinkle with salt and pepper and cook for five minutes until the mushrooms turn golden brown.
7. Stir in the last batch of rosemary and garlic and cook for 1 minute.
8. Stir in beef broth, stir and scrape the bits from the bottom of the skillet. Cook for five minutes until thickened.
9. Add the remaining 1 tablespoon butter and stir until it melts.
10. Assemble the burgers on the buns. Place on top of burgers the mushrooms with sauce.
11. Serve!
